Beef rib burger with chimichurri sauce

Ingredients
1 seeded burger bun
10g red cabbage, shredded
20g white cabbage, shredded
150g beef short rib, marinated and slow cooked
30g mayonnaise
½ teaspoon finely chopped gherkins and onions
20g smokey barbecue sauce baste for beef short rib
2 teaspoons chimichurri sauce
Method
Beef short ribs needs to be dry rubbed and slow cooked for approximately 3-4 hours at 130°C. Remove bones from rib meat once cooked.
Place ribs on medium heat grill or pan.
When the short rib is not sticking to the grill and it lifts easily, baste with smokey barbecue baste.
Once beef short rib is warmed through, turn over and baste with smokey barbecue baste.
Finely chop ½ teaspoon of both gherkin and onion and mix into a mayonnaise (1-2 heaped tablespoons).
